Back At It

Hello, World! (...I am learning to code again... can you tell?!) Here I am, SEVEN years later and I want to blog again. I've been thinking about restarting a food blog for a while now, and it just dawned on me that I could just use this food blog I had when I was 17 years old (yikes) so I'm not totally starting from scratch. I've taken down a lot of my previous posts (they weren't very exciting.. sorry not sorry!) And I've left a few original posts. They are true to my cooking style... "I added a little bit of this and then some of that and it was DELICIOUS!" I spend a quarter of my free time looking up delicious recipes, another quarter modifying those recipes to fit whichever way of eating I am adhering to that week, another quarter wanting "that same dish I made 2 weeks ago... how did I make it again?", and another quarter of my time looking for said recipe and trying to remember the mods. Tonight.. tonight was delicious. I told my dad that they have awesome veggie burritos at Baja Fresh - so we tried to make our own. It's a really easy recipe and it turned out being DELICIOUS. We combined lettuce, tomatoes and parsley together in one bowl.   Then we sauteed some green and red bell peppers with onion, lemon, and various spices. Then we added refried beans, homemade Spanish rice, and awesome (store bought) pico de gallo salsa. Wrapped it all in a tortilla warmed over the stove-top and BAM. (:

      Tonight we didn't have as much time to make a full on meal since it was my first day back to school and I had to stay late for musical rehearsal. Also, my dad was craving "real food" as opposed to the load of vegetables we had been having. We were both drawing a blank on what to make, so we just went to Poquito Mas and had Mexican food. My dad and I got vegetarian tostadas, the only difference being that mine had no cheese or sour cream.       When we got home I was craving chocolate. Solution? Vegan brownies! They were quite delicious. The next day I brought some to school for a snack. My friends were confused how "vegan" and "brownie" could go in the same sentence, but once they tried them, they loved them.

Tonight we had salad and spaghetti. I made the salad which was simple, yet delicious. It had lettuce, tomatoes, cucumbers, shredded carrots, chopped up yellow squash and red bell pepper. It was topped with a homemade oil&vinegar dressing which, in addition to olive oil and apple cider vinegar, included: garlic powder, oregano leaves, salt, pepper, and homegrown rosemary as well. The spaghetti was made my my dad, so I might not get all the ingredients correct. It was a bed of whole wheat spaghetti noodles topped with his sauce of: tomato sauce, mushrooms, squash, bok choy, leeks, carrots, tomatoes, celery, possibly other vegetables that I'm forgetting ... and it's very likely that he seasoned it with salt, pepper, and a few herbs. 

Vegetarian Going Vegan

      September 18th, 2011 .. I decided to adopt vegetarian eating habits. Don't get me wrong - I love meat. This is only a temporary challenge to see what I'm capable of doing if I set my mind to it. There have been plenty of good opportunities to have amazing-tasting meat, but I've stayed true to my vegetarian promise. Now, I'm not INSANE vegetarian. I ate a gummy bear once, which apparently has gelatin. But my whole plan is to not eat big slabs of meat. Or small slabs. Or meat in general. The gelatin found in Oreos and such? I'm fine with that. That's not my goal.       Fast forward to January 2nd, 2011 2012. I watched the movie "Forks Over Knives" and I was inspired to live a healthier lifestyle. I wanted to eat smarter for me, and to help motivate my parents.
